This cookbook and the restaurant's Gluten-Free menu is the result of chef
Michael Bennett 's collaborating compelling Caribbean
cookery elements and structuring them into a Gluten-free equilibrium. Both are
overflowing with a scrumptious mix of seasoning blends and marinades, salads,
appetizers and entrees.
This healthy Gluten-Free recipe styling captures the distinct local flavor of a
multi-national cookery heritage while keeping recipes vigorously vibrant.

to offer.
These Gluten-free recipes were developed for true fans of Caribbean cuisine -
that know "curry powder" or a "jerk glaze" are not the only
examples of a Caribbean chef's repertoire. Chef Michael Bennett asserts that
after working in applaudable Caribbean dining
venues, each played an important role in the successful dispatch of these new
Gluten-Free, mostly seafood recipes. Michael's travel and cookery foundation
stems from his years of working in the Caribbean.
While living in the Caribbean, whether it was
on a British, American, French or Spanish island nation, Michael used these
culinary experiences to shape this new unprecedented Gluten-Free recipe
collection.
